The Algarve is the southernmost region of mainland Portugal, bordering the Alentejo region, north and south with the Atlantic Ocean.

Historically, the Algarve was the last region to be conquered by the Moors and to be part of the Kingdom of Portugal in 1292, and its influences are visible throughout the region. In fact, the toponym itself "Algarve" is of Muslim origin, coming from the term "al-Gharb al-Ândalus" name given to the present Algarve and lower Alentejo, meaning "Western Andalusian", since this was the western part of Muslim Andalusia , the most important Muslim center of the era of "Islamic Hispania", the Islamic center of culture, science and technology. The typical architecture of the Algarve, with typical Moorish terraces and chimneys, the almond trees, orange trees and other fruit trees that multiply throughout the Algarve, as well as several place names, are also Moorish heritages that have been in the region for centuries.
The proximity to North Africa is felt in the warmest and most pleasant weather, and the mountains located in the north of the region shelter the Algarve coast from the strong winds, making this region a privileged holiday spot, having undergone a great tourist development in the last nowadays offering the most varied infrastructures and services for all tastes and pockets.
The Algarve Gastronomy is based on old traditions and products, nevertheless, the Catering offer is very varied and international, in order to meet all the cultures and nationalities that visit it.
The traditional products include all the fish and seafood dishes of this tasty coast, but also pork (the "Pork with the Algarve"), cooked with grain and cabbage, and pastry based mainly on eggs and nuts , such as the almond or the fig, with his so well known D. Rodrigo, or egg yolks, almond paste and caramel from Tavira.
